Doodhi & Methi Muthia



Doodhi & Methi Muthia is a wholesome and flavourful Gujarati snack that’s steamed, sliced, and stir-fried to crispy perfection. Made with grated bottle gourd, spices, and a hint of sesame, this dish is as nutritious as it is delicious. The steamed rolls, sautéed in a fragrant tempering of mustard seeds, sesame seeds, and curry leaves, make it a perfect teatime treat or a healthy anytime snack.

Ingredients

2 Cups Grated Bottle Gourd (Lauki)

½ Cup Grated Onion

½ Cup Atta (Whole Wheat Flour)

½ Cup Sooji (Semolina)

½ Cup Besan (Gram Flour)

1 tsp Ginger paste

1 tsp Green Chilli paste

½ tsp Turmeric powder

½ tsp Jeera (Cumin) seeds

½ tsp Saunf (Fennel) seeds

¼ tsp Hing (Asafoetida)

1 tsp Lemon juice

1 tsp Sugar

¾ Cup chopped Fresh Methi (Fenugreek) leaves

2 tsp Oil

2 pinch Baking Soda

Salt to taste

For the Tempering

2 tsp Oil

½ tsp Mustard seeds

1 tsp Sesame seeds

10 – 12 Curry leaves.

Method

Start by squeezing out all the excess juice from the grated bottle gourd and onion —this step is key for the perfect dough texture.

Combine the drained veggies with all the remaining ingredients and knead everything into a soft, smooth dough.

Get your steamer ready by bringing some water to a boil.

Divide the dough into four portions, then lightly oil your palms and shape each portion into cylindrical rolls about 1 inch in diameter.

Place the rolls in the steamer and let them steam on medium-high heat for 20 minutes.

Once done, remove the rolls and let them cool completely before slicing them into ½ inch thick roundels.

Now for the magic touch: heat some oil in a non-stick pan, toss in mustard seeds and sesame seeds, and let them splutter. Add a handful of curry leaves for that aromatic pop.

Finally, add the sliced Muthia and sauté them on medium flame until they turn golden brown and deliciously crisp.  Serve warm and enjoy this flavourful snack with a Tangy Mint Chutney!
