Ingredients
- 1 cup fine Semolina (Sooji)
- 1¼ cup Water
- 2 medium size Potatoes (boiled)
- ½ cup grated Cheese
- 1 tbsp Oil
- 2-3 cloves Garlic
- ½ tsp Mixed herbs
- ½ tsp Chilli flakes
- 8-10 crushed Pepper
- 2 tbsp chopped Coriander
- Salt to taste.
Method
- Heat some oil in a pan and toss in finely chopped garlic—sauté until you get an amazing aroma.
- Add water and bring it to a boil. Stir in the herbs, chilli flakes, salt and crushed pepper for a burst of flavour.
- Slowly add the semolina, stirring constantly to avoid lumps (smooth is the way to go!).
- Cover the pan, take it off the heat, and let it sit for 10 minutes—it needs a little resting time.
- Meanwhile, grate the boiled potatoes and add it to the cheese in a bowl.
- Add fresh coriander and the cooked semolina to the mix, then knead it all into a smooth dough.
- Shape the dough into bite-sized pieces
- Fry them in medium-hot oil until they turn crispy and golden brown. Serve hot and enjoy the crunch!
