Phirni



Phirni is a rich, creamy, and utterly indulgent rice pudding that’s as comforting as it is delicious! Made with slow-cooked milk, sugar, and ground basmati rice, this traditional treat is infused with the warm, aromatic flavours of saffron and cardamom. It’s silky, nutty, and perfect for chilling before serving, making it an irresistible dessert for any occasion.

Ingredients

1 ltr Milk (Full Cream)

150 gms Basmati Rice.

1 cup Sugar

½ tsp Cardamom powder

Few strands Kesar

Method

  • Start by washing and soaking the rice for about 3-4 hours.
  • Grind the soaked rice into a fine paste using a little water or milk until smooth.
  • In a heavy-bottomed pot, bring the milk to a boil.
  • Reduce the heat and slowly pour in the rice paste while stirring continuously—this prevents lumps and ensures a silky texture. Keep stirring!
  • As the milk thickens, add sugar and continue mixing on low-medium heat until fully dissolved. Adjust sweetness to your liking.
  • Stir in cardamom powder and kesar (dissolved in 2 tsp of warm milk) for that beautiful aroma and flavour.
  • To check if your phirni is ready, dip a spoon in—it should be thick enough to coat the back of the spoon.
  • Let it cool for about 20 minutes, then pour it into serving bowls while still lukewarm.
  • Garnish with chopped dry fruits of your choice, refrigerate for at least 3 hours, and serve chilled. Creamy, fragrant, and absolutely divine!
