Ingredients
1 Cup Flour
3 tsp Baking Powder
1 ½ cups grated Cheddar Cheese
1 Egg (Beaten well)
½ Cup Milk
3 tbsp Butter
½ tsp Sugar
½ tsp Italian Herbs
Salt to taste
½ tsp Chilli Flakes
2 tsp Pizza Sauce
1 cup Finely Chopped Capsicum, Onion and Sweet Corn
2 – 3 Garlic Cloves
Method
Cheesy Muffins
- Start by preheating your oven to 200°C to get things nice and hot.
- In a mixing bowl, combine the baking powder and flour.
- Toss in grated cheese, an egg, 2 tbsp butter and the pizza sauce—mix it all up until well combined.
- Add the milk to form a thick, smooth batter.
- Now, add your chopped veggies, along with a sprinkle of salt, the sugar, the chili flakes, and the Italian herbs.
Time to Bake
- Scoop large spoonsful of the mix into greased muffin moulds.
- Bake for 10-12 minutes until the muffins are puffed up and golden.
- Once out of the oven, brush them with garlic butter for that extra yum factor.
