Cheesy Muffins



Introducing Cheesy Muffins—These savoury bites are loaded with cheese, veggies, and all your favourite pizza seasonings, giving you a soft, fluffy muffin that’s bursting with flavour. They’re easy to whip up and bake in just minutes, making them ideal for quick snacks, brunch spreads, or even a fun party appetizer.

Ingredients

1 Cup Flour

3 tsp Baking Powder

1 ½ cups grated Cheddar Cheese

1 Egg (Beaten well)

½ Cup Milk

3 tbsp Butter

½ tsp Sugar

½ tsp Italian Herbs

Salt to taste

½ tsp Chilli Flakes

2 tsp Pizza Sauce

1 cup Finely Chopped Capsicum, Onion and Sweet Corn

2 – 3 Garlic Cloves

Method

Cheesy Muffins

  1. Start by preheating your oven to 200°C to get things nice and hot.
  2. In a mixing bowl, combine the baking powder and flour.
  3. Toss in grated cheese, an egg, 2 tbsp butter and the pizza sauce—mix it all up until well combined.
  4. Add the milk to form a thick, smooth batter.
  5. Now, add your chopped veggies, along with a sprinkle of salt, the sugar, the chili flakes, and the Italian herbs.

Time to Bake

  1. Scoop large spoonsful of the mix into greased muffin moulds.
  2. Bake for 10-12 minutes until the muffins are puffed up and golden.
  3. Once out of the oven, brush them with garlic butter for that extra yum factor.

Serve these delicious muffins warm, and watch them disappear.
